What is skunked beer?
It refers to a specific type of beer spoilage where a beer’s aroma mirrors that of a skunk’s spray and is irreversible.
What causes skunked or light-struck beer?
When a beer is exposed to light, a photochemical reaction occurs with the hops which create strong and offensive sulfur compounds. These sulfur compounds are the same compounds found in a skunk’s spray.
How does skunked beer occur? Beer can easily be exposed to light in the distribution process, point of purchase store displays and shelves, as well as by the end consumer. Ever set your beer down outside for even a minute?
How quickly can a beer become light-struck?
It can happen in as little as 30 seconds in direct sunlight, several hours in indirect sunlight, and a few days under fluorescent lighting.
How can you prevent light-struck or skunked beer?
